This delicious and aromatic dal is not like the usual Dal at all, this is an exclusive from the Lucknowi cuisine. Try it out, you will know it!
LUCKNOWI DAL
Ingredients
1 cup Tata Sampann Toor Dal
¼ cup yogurt
½ cup fresh cream
½ cup milk
2 tbsps ghee + for drizzling
1 dried red chilli
2 inch cinnamon stick
1 tsp cumin seeds
1 green cardamom
½ tbsp grated ginger
1 tbsp finely chopped garlic
1-2 green chillies, chopped
1 medium onion, finely chopped
½ tsp turmeric powder
½ tsp red chilli powder
Salt to taste
1-2 hot charcoal pieces
Chopped fresh coriander leaves for garnish
Kulcha to serve
Onion rings to serve
Lemon wedges to serve
Method
1. Wash thoroughly Tata Sampann Toor Dal with sufficient water and transfer into a pressure cooker. Add sufficient water and cook under pressure till 4-5 whistles are released. Allow the pressure to reduce completely.
2. Add yogurt into the cooked dal and whisk well. Add fresh cream and whisk again. Add milk and mix well. Cook on low heat till the mixture thickens slightly, whisking occasionally.
3. Meanwhile, heat ghee in a non-stick pan, add dried red chilli, cinnamon stick, cumin seeds and green cardamom. Sauté till fragrant.
4. Add grated ginger, chopped garlic and sauté for 30 seconds. Add green chillies and mix well.
5. Add onion and sauté till it turns golden brown. Add turmeric powder and red chilli powder and salt and mix well.
6. Add the prepared dal in the onion mixture and mix well. Cook for 2-3 minutes.
7. Take hot charcoal pieces in a small stainless steel bowl and drizzle a little ghee on top and cover and switch the heat off and let the flavour infuse for 2-3 minutes. Remove the bowl from the pan. Transfer the dal in a serving bowl.
8. Garnish with chopped coriander and serve hot with kulcha, onion rings and lemon wedges.
