These peanut butter energy bars would get you all pumped up with each bite!
KURMURA ENERGY BARS
Ingredients
3 cups puffed rice (kurmura)
¾ cup jaggery, chopped
2 tbsps ghee + for greasing
¼ cup creamy peanut butter
1 tbsp jam
¼ cup roasted peanuts, crushed
Melted chocolate for coating
Chopped walnut for sprinkling
Sea salt for sprinkling
Method
1. Grease a burfi tray with ghee and set aside.
2. Heat a non-stick wok, add jaggery, ghee and peanut butter, mix and let the jaggery melt.
3. Add jam and mix well. Add puffed rice, crushed peanuts and mix well.
4. Take the pan off the heat and transfer the mixture into the greased burfi tray. Spread it evenly and place a parchment sheet on top and press it using a rolling pin to even out the top.
5. Make cuts on the prepared mixture into equal bars and allow to cool to room temperature. Loosen the sides and de-mould on a worktop and cut to separate the bars.
6. Take melted dark chocolate in a glass, dip the ¼ of the bars into it and place it on a wire rack to let the excess chocolate drip out. Sprinkle chopped walnuts and a little seal salt on the chocolate portion. Refrigerate till set.
7. Wrap each bar with a piece of parchment paper and pack in Tiffin box.
