Jaipuri chicken:
Ingredients
Chicken ½ kg
Ginger garlic 1 tbsp
Cream 2 tbsp
Onion chopped 4 tbsp
Allspice ½ tsp
Chili powder 1 tsp
Salt 1 tsp
Turmeric ½ tsp
Cumin seeds ½ tsp
Fennel seeds ½ tsp
Tomatoes chopped 2
Oil ¼ cup
Coriander leaves 2 tbsp
Method
Blend together onions, ginger garlic, cumin seeds, saunf, chili powder and haldi into a paste, marinate chicken with half the paste for 30 mins. Heat oil in a pan, add remaining blended masala, fry well till oil comes on surface, add chopperized tomatoes, fry well, add marinated chicken with salt, cook until done covered, serve garnished with chopped coriander leaves and cream.
Gol gappa ice cream:
Ingredients
Gol gappay 2 dozen
Chocolate melted 8 ounce
Butter 1 tsp
Sprinkles as required
Vanilla ice cream 1 liter
Chocolate sauce as required
Method
Make hole in gol gappas, dip base of gol gappas in melted chocolate, garnish with sprinkles, set in fridge till firm, fill then with a tsp of vanilla ice cream, drizzle with chocolate sauce and serve immediately.
Mozzarella stuffed seekh kababs:
Ingredients
Mince ½ kg
Ginger garlic paste 1 tbsp
Salt 1 tsp
Crushed red pepper 1 tsp
Allspice 1 tsp
Chat masala 1 tsp
Coriander leaves 2 tbsp
Mint 1 tbsp
Green chilies chopped 3
Brown onion ½ cup
Mozzarella cheese ½ inch sticks
Egg beaten 1
Bread crumbs 2 cups
Wooden skewers as required
Method
Marinate mince with all the given ingredients except cheese, egg and crumbs, chopperize mince well until smooth, take little portion in your hand, stuff with mozzarella stick, cover with mince to form into seekh kabab, roll well in bread crumbs, dip in beaten egg and deep fry, remove when fix a skewer in the kabab and serve.
