Usually the seeds of a veggie/fruit are thrown. But, the seeds of a jackfruit are edible and can be turned into something delicious. This is one such recipe, go for it!
JACKFRUIT SEEDS SABZI
Ingredients
25-30 ripe jackfruit seeds, boiled, peeled and cut into quarters
1½ tbsps oil
1-2 green chillies, chopped
2 tsps grated ginger
2 tsps finely chopped garlic
1 medium onion, finely chopped
1 cup fresh tomato puree
1½ tsps Tata Sampann Garam Masala
1½ tsps red chilli powder
½ tsp turmeric powder
¾ tsp coriander powder
1½ tsps cumin powder
Salt to taste
2 tbsps freshly chopped coriander leaves
Coriander sprig for garnish
Chapatis to serve
Method
1. Heat oil in a non-stick pan, add green chillies, ginger and garlic. Sauté for 1-2 minutes.
2. Add onion, mix well and cook till translucent. Sautéing occasionally. Add tomato puree and mix well. Cook for 2-3 minutes.
3. Add Tata Sampann Garam Masala, red chilli powder, turmeric powder, coriander powder, cumin powder and mix well. Cook for 1 minute.
4. Add salt, mix well and cook for 2-3 minutes. Add ½ cup water and mix well. Cover and cook till the oil separates.
5. Add jackfruit seeds, chopped coriander and mix well. Cook for 1 minute and take it off the heat.
6. Transfer into a serving plate garnish with coriander sprig. Serve hot with chapatis.
