Hot and Sour Spaghetti:
Ingredients:
Boiled spaghetti 1 packet
Chicken ½ kg
Capsicum 2
Cabbage 1 cup
Green onion 1 cup
Crushed red chilies 1 tsp
Tomato ketchup 1 cup
Salt ½ tsp
Black pepper ½ tsp
Oil ½ cup
Green coriander ½ bunch
Soya sauce 1 tbsp
Vinegar 1 tbsp
Brown sugar 1 tsp
Finely chopped garlic 1 tsp
Green chilies few
Fish Fillets with Ginger Sauce:
Ingredients:
Fish fillet ½ kg
Black Pepper 1 tsp
Carom Seeds 1 tsp
Salt ½ tsp
Oregano ½ tsp
Red Chili Powder 1 tsp
Corn flour 4 tbsp
Oil (for frying) as required
Ingredients for Sauce:
Finely Chopped Ginger 4 tbsp
Brown Sugar 1 tsp
Red Chili (crushed) 2 tsp
Tomato Ketchup ½ cup
Vinegar 2tbsp
Soy Sauce 2 tbsp
Garlic 1tbsp
Oil 2 tbsp
Method:
• Marinate fish with black pepper,salt,oregano, carom seeds,red chili powder, corn flour and leave it for 10 minutes.
• Now in a pan, heat oil and fry.
• For making sauce:
• In a pan, heat oil add garlic and fry.
• Now add finely chopped ginger, brown sugar, chopped red chili, tomato ketchup,vinegar, soy sauce and cook.
Kaddu ka Halwa:
Ingredient
Pumpkin grated 2 kg
Green cardamoms 6
Pistachio 50 gm
Coconut sliced 100 gm
whole dried milk 250 gm
Sugar 250 gm
Clarified butter 250 gm
Screw pine essence 1 tbsp
Dried milk 1 cup
Method
In pan, put together 2 kg grated pumpkin and 1 glass water. Cover and cook over low flame till tender. Add 250 gm ghee and fry well. Now add 250 gm sugar and 6 green cardamoms. Cook till water dries. Now add 100 gm sliced coconut and 250 gm Khoya. Lastly add 1 tbsp Kewra water and turn the flame off. Put mixture in serving dish, garnish with chopped pistachio and serve.
