HOKEY POKEY
Ingredients
1½ cups refined flour (maida)
1 tsp baking soda
½ cup brown sugar
1 tbsp golden syrup
½ cup butter
1 tbsp milk
Oil for spraying
Method
1. Preheat the oven at 180˚C. Line a baking tray with a parchment paper.
2. Heat a deep non-stick pan, add brown sugar, golden syrup, and butter. Mix well and keep stirring till the sugar melts.
3. Add milk and mix well. Switch the heat off and allow to cool to room temperature.
4. Sieve flour and baking soda into the pan, mix till well combined.
5. Spray the parchment sheet with oil, take a portion of the prepared mixture and roll it into a ball and slightly flatten them. Press down slightly with a fork.
6. Bake for 15 minutes, take them off the heat and allow to cool to room temperature.
7. Store in air tight container or serve as required.
