French Beans and Carrot Thoran
‘Thoran’ is a traditional vegetable preparation that is popular in Kerala. It is a dry subzi that can be prepared with many different veggies. In this recipe, we have used a colourful combination of French beans and carrot. First, the veggies are sautéed with onions and an aromatic tempering of seeds and red chillies, and then it is perked up with a tasty mixture of coconut and other ingredients, which not only improves the taste but also gives a nice mouth-feel to the French Beans and Carrot Thoran. Onions may or may not be added, but they give a nice crunch and strong flavour if added. Enjoy the thoran with steaming hot rice and sambhar or rasam.
Preparation Time: 15 minutes.
Cooking Time: 10 minutes.
Serves 3.
1¼ cup chopped French beans
¾ cup chopped carrot
¼ cup freshly grated coconut
¼ tsp turmeric (haldi) powder
1 tsp chilli powder
¼ tsp cumin seeds (jeera)
1 tsp crushed garlic (lehsun)
2 tbsp oil
½ tsp mustard (rai / sarson) seeds
1 tsp urad dal (split black lentils)
5 to 6 curry leaves (kadi patta)
2 Kashmiri dry red chillies, broken into pieces
¼ cup finely chopped onions
Salt to taste
1 tsp coconut oil
1. Combine the coconut, turmeric powder, chilli powder, cumin seeds and garlic in a plate and mix very well using your hands. Keep aside.
2. Heat the oil in a deep non-stick kadhai, add the mustard seeds, urad dal, curry leaves, and Kashmiri red chillies and sauté on a medium flame for a few seconds.
3. Add the onions, French beans, carrot and salt and sauté on a medium flame for 2 minutes.
4. Add 2 tbsp water, mix well. Cover with a lid and cook on a medium flame for 5 to 6 minutes, while stirring occasionally.
5. Add the prepared coconut mixture and coconut oil, mix well and cook on a medium flame for 1 minute, while stirring occasionally.
Serve hot.
