Fish Patties:
Ingredients
Fish fillets cooked and flaked ½ kg
Green onion chopped 1
Garlic minced 4 cloves
Fresh ginger (grated) 1 teaspoon
Panko breadcrumbs 1 -1/2 cups
Italian herbs ½ teaspoon
Paprika ½ teaspoon
Dried parsley 1 teaspoon
Salt and pepper ¼ teaspoon
mango habanero sauce 1tbsp
Eggs 2
Mayonnaise ¼ cup
Lemon juice 1 tablespoon
Hot sauce 2 tablespoon
Lemon zest 1
Oil to cook
Method:
Add to the flaked fish all the ingredients and mix them together. Make into patties. Heat oil, add the patties. Cook until golden brown. Drain on paper towels and serve.
Date Almond Cake:
Ingredients
Dates sliced 1 cup
Almonds ground 1-1/4 cups
Rice flour 1 tablespoon
Egg whites 4
Lemon juice 1tbsp
Caster sugar ½ cup
Cocoa powder 1tbsp
Dried cranberries ¼ cup
Ingredients Lemon glaze
Icing sugar 1 cup
Lemon juice 2tbsp
Method
Beat egg whites with a few drops of lemon juice until soft peaks form. Gradually add sugar, beating until firm but glossy peaks form. Fold in ground almonds, cocoa and remaining lemon juice. Toss dates and cranberries with the rice flour and gently fold into the mixture. Spoon mixture into a greased and lined tin or dish dusted with extra rice flour. Bake at 180 degrees c for 30-35 minutes until the cake begins to pull away from the sides of the pan. For the lemon glaze, mix icing sugar with enough lemon juice to make it spreadable. Cool cake in pan on a wire rack for few minutes, then loosen the sides of the pan and remove. While still warm, top with lemon glaze and serve in slices.
