Sabudana vada mixture stuffed with chilli cheese mixture and deep fried.

CHILLI CHEESE SABUDANA VADA

Ingredients

1 cup sago (sabudana), soaked for 2-3 hours and drained
1-2 green chillies, finely chopped
2 tablespoons grated cottage cheese (paneer)
3-4 tablespoons grated processed cheese
2 tablespoons crushed roasted peanuts
1 tablespoon chopped fresh coriander leaves
Salt to taste
½ teaspoon sugar
1 tablespoon lemon juice
1 tablespoon boiled and mashed raw bananas
¼ medium green capsicum, finely chopped
1 tablespoon Jain Schezwan sauce
Oil for greasing and deep-frying
Green chutney for serving
Tomato ketchup for serving

Method

1. Mix together sago, peanuts, coriander leaves, salt, sugar, lemon juice and raw bananas in a bowl.
2. Mix together green chillies, capsicum, cottage cheese, processed cheese, Schezwan sauce and salt in another bowl.
3. Divide the chilli cheese mixture into equal portions and shape into small balls.
4. Grease your palms with some oil and divide the sago mixture into equal portions. Place a chilli cheese ball in the centre of each portion, bring the edges together and shape in a vada.
5. Heat sufficient oil in a kadai. Deep-fry the vadas till golden brown and crisp. Drain on absorbent paper.
6. Serve hot with green chutney and tomato ketchup.
