Dum Bhaji Masala
Potato boiled 1 cup
Cauliflower boiled 1 cup
peas boiled ½ cup
Carrot 1 cup
Oil ¼ cup
Butter ¼ cup
Onion chopped 1 medium
Garlic chopped 1 tbsp
Salt as required
Turmeric 1 tsp
Red chili powder 1 tbsp
All spice powder 1 tsp
Red chili crushed 1 tsp
Lemon juice 2 tbsp
Green chili chopped 2 tbsp
Fresh coriander chopped as required
METHOD:
All boiled vegetables pour in a blender and blend it. Then in a wok add oil and butter then sauté garlic and ginger paste. after this add all spices and roast well then add vegetable paste and mix. finally add lemon juice, green chili and green coriander and cook for 4 to 5 minutes and serve.
Besan Kay Parathay:
Gram flour 1 cup
Flour 2 tbsp
Onion chopped ¼ cup
Green chili chopped 1 tbsp
Coriander chopped 1 tbsp
Mint chopped 1 tbsp
Dill chopped 1 tbsp
Salt as required
Oil 2 tbsp
Water as required
METHOD
In a bowl all ingredients mix and knead well and leave to rise for 10 minutes .after this make the ball and then roll it and fry then serve it .
Baingan ki Karahi:
Eggplant cubes 500 gm
Corn flour as required
Oil ½ cup
Ginger & garlic paste 1 tbsp
Onion paste ½ cup
yogurt ¼ cup
Cream ¼ cup
Salt as required
White pepper 1 tsp
Cumin crushed 1 tsp
Coriander crushed 1 tsp
Chicken powder 1 tsp
Fresh coriander chopped as required
Green chili julienne 6 to 8
METHOD:
Eggplants cubes soaked in salted water .after some time remove and in a bowl and mix corn flour then deep fry .after in wok heat oil and sauté garlic ginger paste then add onion paste ,yogurt and all spices and cook till then oil separate after this add cream and cook then add fried eggplants .finally garnish with green coriander and serve .
