A quick recipe to make the sinfully delicious double layered brownie.

DOUBLE LAYER BROWNIE

Ingredients

1 cup grated dark chocolate
100 gms butter + for greasing
3 eggs
½ cup castor sugar
1½ cups refined flour + for dusting
2 tbsps cocoa powder
¾ cup cream cheese
½ tsp vanilla essence
1 tbsp cornstarch
3 tbsps milk
1 egg yolk
Vanilla ice cream to serve
Caramel sauce for garnish
Fresh mint sprig for garnish

Method

1. Preheat the oven at 180ºC.
2. Take dark chocolate and butter in a bowl. Microwave the mixture for a minute. Set aside.
3. Break eggs and add in a bowl. Add sugar and mix well till sugar is mixed completely.
4. Combine the micro-waved mixture and the egg mixture. Mix well.
5. Sift together refined flour and cocoa powder in the mixture. Gently cut and fold the mixture and mix well.
6. Take cream cheese in another bowl. Add vanilla essence, cornstarch, milk and egg yolk. Mix well. Transfer in a piping bag.
7. Grease a baking tray with butter and dust with flour. Add the cake batter in the tray. Pipe out the cheese mixture on top. Make desired shapes on top with a toothpick. Cover from top with an aluminum foil.
8. Bake at 180ºC for 20-25 minutes.
9. Cut the cake into slices.
10. Serve immediately with vanilla ice cream, garnished with caramel sauce and mint sprig.
