DHAPATE
Ingredients
1 cup jowar flour
½ cup rice flour
¼ cup wheat flour
¼ cup chickpea flour (besan)
Salt to taste
¼ tsp turmeric powder
1 tbsp finely chopped garlic
1 medium onion, finely chopped
1½ tbsps green paste (2 green chillies 1 tsp jeera and a handful of coriander leaves paste)
½ cup yogurt + for serving
¼ cup chopped fresh coriander
2 tsps oil + for drizzling
4-5 zip lock bags
Banana leaf for plating
Method
1. Add jowar flour, rice flour, wheat flour, chickpea flour, salt, turmeric powder, garlic, onion, green paste, yogurt and chopped coriander in a bowl. Mix well. Add little water, combine well and knead to soft dough.
2. Divide the dough into equal portions. On a worktop, place a zip lock bag, drizzle oil over it to grease, take ball size dough, grease hand with water and flatten the dough by tapping it with little pressure from hands. Keep it thick.
3. Heat a non-stick tawa, add flattened dough placing moistened face down, flip on another side drizzle oil on both sides and cook for 5-6 minutes over medium heat till golden brown specs appear. Drain on an absorbent paper.
4. Transfer prepared dhapates on a banana leaf kept over serving plate.
5. Serve hot with yogurt.
