Corn Capsicum Masala is a tangy yet nutritional dish, healthy and fulfilling at the same time!.A must-try recipe, you can have it even when on a diet!

CORN CAPSICUM MASALA – (Serves – 4)

Ingredients

1 cup corn kernels, boiled
1 medium green capsicum, cut into cubes
1 tablespoon oil
1 teaspoon cumin seeds (jeera)
1 medium onion, finely chopped
1 tablespoon ginger-garlic paste
1 teaspoon red chilli powder
¼ teaspoon turmeric powder
¾ teaspoon coriander powder
½ teaspoon cumin (jeera) powder
1 cup tomato puree
¾ teaspoon garam masala powder
1 tablespoon fresh cream
Salt to taste
Chopped fresh coriander leaves for garnishing

Method

1. Heat oil in a non-stick pan. Add cumin seeds and onion, mix and sauté till the onions are lightly browned.
2. Add ginger-garlic paste, mix and sauté till fragrant.
3. Add chilli powder and turmeric powder, mix and sauté for a minute. Add coriander powder and cumin powder, mix and sauté for a minute.
4. Add tomato puree, stir and cook till the oil separates. Add garam masala powder and mix well.
5. Add green capsicum, mix and cook for 2-3 minutes. Add corn kernels, mix well, cover and cook for 5-6 minutes.
6. Add cream and mix. Add salt, mix well and let it get heated through.
7. Garnish with coriander leaves and serve hot.
