Minced chicken vada placed inside a bread bun served with green chutney. it makes a perfect snack for all occasions.
CHICKEN VADA PAV
Ingredients
250 grams fine chicken mince
8 pavs, slit
1 tbsp oil + for greasing + for deep frying
½ tsp mustard seeds
6-8 curry eaves, chopped
2 green chillies, chopped
1 tbsp chopped garlic
½ tsp turmeric powder
1 tbsp freshly chopped coriander leaves
Salt to taste
1½ cups gram flour (besan)
¼ tsp red chilli powder
1 tsp cumin powder
2 tsps coriander powder
½ tsp turmeric powder
A pinch of baking soda
Green chutney to serve
Vada pav sukha chutney to serve
Fried green chillies to serve
Method
1. For tempering, heat oil in a non-stick pan. Add mustard seeds and let the seeds splutter. Add curry leaves, green chillies, garlic, turmeric powder, chopped coriander and sauté well for 1 minute and take it off the heat.
2. In a bowl, add chicken mince, prepared tempering, salt and mix well.
3. Grease palms of the hands with oil and take a portion of the prepared chicken mixture and shape them into wadas and set aside.
4. In another bowl, add gram flour, red chilli powder, cumin powder, coriander powder, turmeric powder, salt and a pinch of baking soda. Add sufficient water to make a semi-thick batter.
5. Heat sufficient oil in a kadai, dip and coat the prepared chicken vadas with the prepared batter and drop into the hot oil. Deep fry on a medium flame till golden and crisp. Drain on an absorbent paper.
6. Apply green chutney, sprinkle sukha chutney, and place the chicken vadas. Serve immediately with fried green chillies.
