A quick and easy way to make delicious and lip-smacking Chicken Sukka.
CHICKEN SUKKA
Ingredients
750 grams chicken on the bone, cut into 2 inch pieces
2 medium onions, quartered
6-8 garlic cloves
1 inch ginger
3 dry red chillies, stems removed and deseeded
½ inch cinnamon stick
3-4 cloves
1 tbsp coriander seeds
5-6 black peppercorns
Salt to taste
1 tsp garam masala powder
½ tsp turmeric powder
2 tbsps oil
½ cup chopped fresh coriander
Lemon slice for garnish
Coriander sprig for garnish
Method
1. Add onion, garlic cloves, ginger, dry red chillies, cinnamon stick, cloves, coriander seeds, black peppercorns in a blender jar. Add little water and blend to a fine paste.
2. Take chicken in a bowl, add the prepared paste, salt, red chilli powder and turmeric powder. Mix well. Set aside to marinate for 30-45 minutes.
3. Heat oil in a deep non-stick pan, add the chicken and sauté for 5-6 minutes on high heat, stirring continuously.
4. Add coriander, mix well and sauté for 2-3 minutes on high heat.
5. Cover and cook on medium heat for 15-20 minutes, stirring occasionally.
6. Transfer chicken sukka in a serving bowl.
7. Serve hot garnished with a lemon slice and a coriander sprig.
