A quick snack for a hungry evening!
CHICKEN NACHO BITES
Ingredients
300 grams chicken breasts
2 cups nachos
Salt to taste
1 tsp onion powder
1 tsp fried garlic
Crushed black peppercorns to taste
1 tbsp mustard sauce
2 tbsps cheese spread
1 tbsp rice flour
½ tbsp corn starch
2 tbsps chopped fresh coriander leaves
1 egg
Oil for deep frying
Tomato ketchup to serve
Method
1. Cut the chicken into 2 inch triangles and transfer them into a bowl. Add salt, onion powder, fried garlic, crushed black peppercorns, mustard sauce, cheese spread and mix well. Add rice flour, corn starch, chopped coriander leaves and mix well. Set aside for 20-25 minutes.
2. Take nachos in a large bowl and crush them to a coarse powder, set aside.
3. Break in the egg in the marinated chicken mixture and mix well.
4. Heat sufficient oil in a pan, coat individual chicken piece with the crushed nachos and drop into the hot oil and deep fry till golden and crispy. Drain on an absorbent paper.
5. Serve hot with tomato ketchup.
