CHEESE NAMAK PARE
Ingredients
1½ cups refined flour
½ tsp carom seeds (ajwain)
Salt to taste
2 tbsps ghee
20 grams processed cheese
Oil for greasing + deep frying
Method
1. In a large bowl, add flour, carom seeds, salt, ghee and grate cheese directly into the bowl. Mix till it reaches breadcrumbs consistency.
2. Add ½ cup water and knead to stiff dough. Divide the dough into 4 portions and shape them into balls.
3. Grease a worktop with oil, place the dough ball on it and flatten it. Roll it into thin disc and prick it all over with a fork.
4. Trim and discard the edges of the disc to shape it into a square. Cut it into triangles.
5. Heat sufficient oil in a wok, drop in the prepared triangles and deep fry till golden brown and crisp. Drain on an absorbent paper.
6. Transfer into an airtight jar or serve.
