Buttermilk Cake With Apple Cider Icing:
Ingredients
Butter softened 1 cup
Granulated sugar 2 1/3 cup
Vanilla essence 1 ½ tsp
Eggs 3
Flour 3 cups
Baking powder 1 tsp
baking soda ½ tsp
butter milk 1 cup
Ingredients for icing
icing sugar heaped 1 cup
cream cheese softened 4 ounce
butter softened 3 ounce
Apple cider vinegar 2 to 3 tbsp
Freshly grated nutmeg ½ tsp
Method
Pre-heat oven to 180 d, grease flour in 10 inch fluted tube pan, beat butter and sugar until light and fluffy, beat in vanilla and eggs one at a time, beating well after each addition. In another bowl mix together flour, baking powder and baking soda, add to the cream mixture alternating with the buttermilk, batter will be thick, transfer to the prepared pan, bake until a toothpick inserted in the center comes out clean about 45-50 mins, cool in pan for 10 mins before removing to a wire rack.
Method for icing
Beat cream cheese, butter, icing sugar and enough apple cider to reach the desired consistency, spoon over the cake, if desired sprinkle with freshly grated nutmeg.

Cucumber Vinegar Salad:
Ingredients
Cucumber 2 peeled and sliced
Vinegar 6 tbsp
Water ½ cup
Sugar ¼ cup
Crushed red pepper ½ tsp
Black pepper crushed ½ tsp
Parsley dried 1 tsp
Tomato cubes 1
Onion cubes 1
Green chilies 2 chopped
Salt ½ tsp
Method
Cook water and sugar till thick and sugar melts, add in vinegar, cool add seasonings, then mix with all vegetables, serve chilled.

Kashmiri smoked kababs:
Ingredients
Beef minced ½ kg
Coconut roasted &grinded 2 tbsp
Button red chilies 12 roasted & grinded
Black pepper 12 roasted & grinded
Cloves 6
Cumin seeds 1 tsp
Salt 1 tsp
All spice ½ tsp
Coriander leaves 2 tbsp
Egg half to 1 beaten
Method
Roast and grind all the spices, mix all in the mince very well and grind once again, give dum of coal, make into kababs with greased hands, shallow fry in oil with cucumber and vinegar salad.
