ALU TARKARI
Ingredients
4 medium potatoes, peeled and cut into 2 inch pieces
2 tbsps mustard oil
½ tsp turmeric powder
Salt to taste
¼ tsp dried fenugreek seeds (methi dana)
¼ tsp cumin seeds
¼ tsp onion seeds (kalonji)
½ tsp fennel seeds (saunf)
¼ tsp mustard seeds
2 dried red chillies
1 large tomato, finely chopped
¾ tsp Tata Sampann Garam Masala
A pinch of sugar
Hot puris to serve
Method
1. Heat mustard oil and let it smoke, meanwhile, sprinkle turmeric powder and salt in the potatoes and toss well.
2. To make panch phoran, add dried fenugreek seeds, cumin seeds, onion seeds, fennel seeds and mustard seeds in a small bowl and mix well. Set aside.
3. Add the potatoes in the hot oil. Cook till golden brown and slide the potatoes on the side of the pan.
4. Add 1 tsp of the prepared panch phoran and dried red chillies and sauté for a few seconds. Toss the potatoes with the tempering, cover and cook for 2-3 minutes.
5. Add tomato, adjust salt and mix well. Cook for 1 minute.
6. Add ½ cup water and Tata Sampann Garam Masala and mix well. Cover and cook till the potatoes are cooked completely.
7. Add sugar and mix well. Take the pan off the heat and transfer into a serving bowl.
8. Serve hot with hot puris.
