The easiest sabji you can put together in minutes with the everyday kitchen ingredients- Potatoes and pointed gourd and your masala box is all you need.

ALOO POTOL

Ingredients

3 medium potatoes
6 medium potol, peeled and cut into half
2 tsps oil
Salt to taste
½ tsp turmeric powder
2 tsps panch phoran
½ tbsp ginger garlic paste
½ tsp coriander powder
1 tsp red chilli powder
1-2 green chillies
½ tsp sugar

Method

1. Keep a nonstick pan for heating and cut potatoes in cubes. Add oil to the pan and then add potatoes and potol.
2. Add salt, ¼ tsp turmeric powder and mix well. Cook till potatoes are golden brown in colour. Remove the potatoes and potol in a bowl.
3. Add panch phoron to the same pan, sauté for a minute and then add ginger garlic paste, remaining turmeric powder, coriander powder and chilli powder.
4. Add the fried potatoes and potol to the pan. Add green chillies, sugar and ½ cup water to the pan. Mix well, cover and cook for 2-3 minutes.
5. Serve hot garnished with coriander sprig.
