ALOO MUTTON CURRY
Ingredients
750 grams mutton, cut into 2 inches on the bone
4 medium potatoes, peeled and cut into half
½ cup oil
4-5 green cardamoms
4-5 cloves
1 inch cinnamon stick
½ tsp fennel seeds (saunf)
2 large onions, sliced
Salt to taste
1½ tbsps ginger-garlic paste
1½ tsp Tata Sampann Chilli Powder
3 tsps fennel (saunf) powder
1 tsp green cardamom powder
½ cup yogurt
2 tbsps freshly chopped coriander leaves
2 inch ginger, cut into thin strips + for garnish
Coriander sprig for garnish
Method
1. Heat oil in a pressure cooker, add green cardamoms, cloves and cinnamon stick, fennel seeds and sauté till fragrant.
2. Add onions and salt sauté till golden brown. Add ginger-garlic paste and mix well. Cook for 1 minute.
3. Add mutton and sauté on high heat till it becomes brown. Add potatoes and add Tata Sampann Chilli Powder, fennel powder, and green cardamom powder.
4. Add yogurt and sauté for 1 minute. Add 2 cups water, mix well. Cover and cook under pressure till 4-5 whistles are released. Allow the pressure to reduce completely.
5. Open the lid, add chopped coriander, ginger and mix well. Take the cooker off the heat.
6. Transfer into a serving bowl, garnish with ginger strips and coriander sprig. Serve hot.
