Bite-sized kachoris stuffed with moong dal and spices is a snack you can never get enough of!
MOONG DAL KACHORI
Ingredients
1 cup split skinless green gram (moong dal), soaked for 2-3 hours and drained
2 tbsps ghee
1 inch ginger, finely chopped
2 tsps fennel seeds
2 tsps coriander seeds
2-3 green chillies, chopped
½ tsp turmeric powder
1 tsp red chilli powder
1 tsp coriander powder
½ tsp cumin powder
Salt to taste
1 tsp dried mango powder
1 tsp powdered sugar
1 tbsp chopped fresh coriander leaves
2 tsps lemon juice
Ready-made kachori dough made using 1½ cups refined flour
Oil for deep frying
Method
1. Heat ghee in a non-stick pan, add ginger, fennel seeds, coriander seeds, green chillies and sauté for 1 minute.
2. Add turmeric powder, red chilli powder, coriander powder, cumin powder and mix well.
3. Add split skinless green gram, salt, dried mango powder, powdered sugar, chopped coriander and mix well. Cook for 1-2 minutes.
4. Add lemon juice, mix well and take the pan off the heat.
5. Transfer the mixture into a blender jar, grind to a coarse paste. Transfer into a bowl.
6. For making kachoris, take a portion of the dough and shape it into a ball. Press and make a cavity in the centre, stuff it with a portion of the prepared mixture, bring the sides in the middle and press to seal.
7. Lightly shape it into a ball and flatten it slightly.
8. Heat sufficient oil in a kadai, deep fry the prepared kachoris on medium heat till golden brown and crisp. Drain on an absorbent paper.
9. Serve warm.
