Degi mutton Qorma
Ingredients
Mutton ½ kg
Cayenne pepper 1 tsp
Onion sliced 3
Clarified butter 1 cup
Cloves 5-6
Green cardamom 5-6
Ginger, garlic paste 2 tbsp
Red chili powder 1 tbsp
Coriander powder 2 tbsp
Salt to taste
Yogurt 1 cup
Green chilies 5-6 (sliced)
Black cardamom powder ½ tsp
Nutmeg powder ½ tsp
All spice 1 tsp
Ginger 1 tsp
Screw pine essence 1 tsp
Method
Heat oil in a pan fry onion til brown . Remove onion from oil and crush it. Keep it aside. Add cloves, green cardamom and ginger garlic paste in oil along with mutton. Cook it for 8-10 minutes.
Combine red chili powder, degi mirch, coriander powder and salt with a little water. Add this mixture in meat and cook for 6 minutes.
Now add sufficient water, cover and cook until meat tender.
Now add yogurt and cook on medium high flame.
Add crushed onion, green chilies, green cardamom, garam masala powder, nut mug powder, ginger and kewra water.
Till Walay Aalu :
Ingredients:
Boiled potatoes ½ kg
Cumin 2 tsp
Sesame seeds 4 tbsp
Crushed red chilies 2 tsp
Turmeric powder ½ tsp
Salt ½ tsp
Crushed all spices 1 tsp
Yogurt 4 tbsp
Chopped tomatoes 1 cup
Crushed black pepper 2 tsp
Oil ½ cup
Green corinder, green chilies for garnishing
Method:
, add boiled potatoes and add 4 tbsp yogurt, 2 tsp crushed red chilies, ½ tsp turmeric powder, ½ tsp salt, 1 tsp crushed all spices, 2 tsp crushed black pepper, 1 cup chopped tomatoes, 2 tsp cumin and ½ cup water and cover the lid and cook it for 10 minutes. Now dish it out.
Now heat ½ cup oil and then turn off the stove. Now add 4 tbsp sesame in the oil and add bhagar in the potatoes. Garnish with green coriander and green chilies.
