  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup honey
  • 3 large eggs
  • 1 cup milk
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Frosting Ingredients

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/2 cup chopped almonds (for garnish)

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans with parchment paper.
  2. In a mixing bowl, combine the all-purpose flour, almond flour, baking powder, baking soda, and salt. Whisk to combine.
  3. In a separate bowl, cream the softened butter and granulated sugar until light and fluffy. Add the honey and mix well.
  4. Add the eggs one at a time, mixing well after each addition. Stir in the milk and vanilla extract until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
  8. For the frosting, whip the heavy cream in a mixing bowl until soft peaks form. Gradually add the powdered sugar and vanilla extract, whipping until stiff peaks form.
  9. Once the cakes are completely cooled, place one layer on a serving plate and spread a layer of whipped cream frosting on top.
  10. Place the second cake layer on top and frost the top and sides of the cake with the remaining whipped cream.
  11. Garnish with chopped almonds on top and around the sides. Chill in the refrigerator for about 30 minutes before serving.
