Boiled and cored potatoes stuffed with cottage cheese mixtures, cut into thick slices coated with sesame seeds and shallow fried.
BHARWAN TIL ALOO
Ingredients
4-8 medium potatoes (aloo), peeled, cored and parboiled
1 cup white sesame seeds (til), roasted
½ cup grated cottage cheese (paneer)
1 tablespoon chopped fresh coriander leaves + for garnishing
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped cashewnuts
1 inch ginger, grated
½ teaspoon red chilli powder
1 teaspoon dried mango powder (amchur)
½ teaspoon cumin (jeera) powder
Salt to taste
Oil for shallow-frying
Method
1. Mix together cottage cheese, coriander leaves, mint leaves, cashewnuts, ginger, chilli powder, dried mango powder, cumin powder and salt in a bowl.
2. Stuff the potatoes with the prepared mixture and cut into thick slices.
3. Mix together sesame seeds and salt in another bowl.
4. Coat the slices with the sesame mixture.
5. Heat some oil in a non-stick pan. Place the slices on it and shallow-fry till golden brown and crisp.
6. Garnish with coriander leaves and serve immediately.
