Fish fillet pieces marinated with freshly made pesto sauce and steamed to perfection.

STEAMED PESTO FISH

Ingredients

4 basa fish fillets, cut into 1½ inch pieces
1 cup fresh basil leaves
½ cup almonds, blanched and peeled
8-10 garlic cloves
¼ cup parmesan cheese powder
Salt to taste
Crushed black peppercorns to taste
¼ cup olive oil
Oil for greasing

Method

1. To make pesto, blend together basil leaves, almonds, garlic, parmesan cheese powder, salt, crushed peppercorns and olive oil to a smooth paste.
2. Put fish pieces on a plate. Add prepared pesto and rub well on both sides.
3. Heat sufficient water in a steamer. Grease the steamer plate with some oil, place fish pieces on it and steam for 10-15 minutes.
4. Cut into pieces and serve hot with salad.
