Mutton mince cooked in bolognaise sauce and served in lettuce cups.

LETTUCE BOLOGNAISE

Ingredients

8 Iceberg lettuce cups
1 cup mutton mince
1 tsp oil
1 medium onion, finely chopped
¼ cup grated carrot
2 tsps finely chopped garlic
Salt to taste
1½ tbsps sweet red chilli sauce
4-5 fresh thyme sprigs
2 medium tomatoes, finely chopped
4 tbsps tomato puree
Crushed black peppercorns to taste
Parmesan cheese powder for sprinkling

Method

1. Heat oil in a non-stick pan. Add onion, carrot and garlic and saute well.
2. Add mutton mince, mix and saute for 2 minutes. Add salt, red chilli sauce and thyme sprigs, mix well, cover and cook on medium heat for 3-4 minutes.
3. Add tomatoes and tomato puree and mix well. Add crushed peppercorns, mix well, cover and cook on medium heat for 20-25 minutes.
4. Fill lettuce cups with the cooked mutton mince mixture, place on a serving platter, sprinkle Parmesan cheese powder on top and serve immediately.
