Delicious egg stuffed within roti makes for a yummy and filling lunch treat!

EGG STUFFED PARATHA

Ingredients

1 cup whole wheat flour + for dusting
Salt to taste
1 tbsp + 4 tsps oil
2 eggs
2 tbsps finely chopped onion
2 tbsps tomato chopped
1 tsp chopped fresh coriander
1 tsp chopped green chilli
¼ tsp turmeric powder
½ tsp cumin powder
¾ tsp red chilli powder
Tomato chutney to serve

Method

1. Take whole wheat flour in a bowl, add salt, 1 tbsp oil and knead to soft dough. Set aside for 10-15 minutes.
2. Divide dough into equal portions. Dust some flour, flatten it slightly and roll into a thin disc.
3. Heat a non-stick tawa, add thin disc, flip over and heat till golden brown specs appear on both sides.
4. For stuffing, add eggs, onion, tomato, coriander, green chilli, turmeric powder, cumin powder and red chilli powder. Beat and mix well.
5. Drizzle 2 tsps oil on both sides of paratha. Create a pocket in paratha with a flat ladle. Flip and heat the paratha.
6. Beat egg mix and add in pocket created between the paratha, let it spread properly. Apply 1 tsp oil on one side, flip over and apply remaining oil on another side. Flip and cook on another side till egg is cooked completely on medium heat.
7. Cut prepared parathas into quarters.
8. Transfer paratha pieces in a serving plate
9. Serve hot with tomato chutney, add 2 tbsps chopped onion, 2 tbsps chopped tomato, 1 tbsp chopped coriander and make a salad for serving.
