To make a simple Uttapam exciting, top it with some teekhi and meethi chutney and make an Uttapam chaat for small or big celebrations
UTTAPAM CHAAT
Ingredients
2 cups ready-made dosa batter
Oil for drizzling
8 tbsps ready-made dosa bhaji
½ cup grated mozzarella cheese
Green chutney for drizzling
Tata Sampann Tamarind And Date Chutney for drizzling
Nylon sev for sprinkling
Freshly chopped coriander leaves for garnish
Method
1. Heat a non-stick tawa, drizzle a little oil and grease the tawa with a tissue paper.
2. For one portion, pour 2 ladle of the batter to make 2 small uttapams on the tawa. Cook for 1-2 minutes or till the base is cooked.
3. Flip the uttapams and spread a portion of the dosa bhaji on each and spread it evenly.
4. Sprinkle a little grated mozzarella cheese on each, cover and cook till the cheese melts completely. Take it off the heat.
5. Drizzle a little green chutney and Tata Sampann Tamarind And Date Chutney. Sprinkle a little sev and garnish with chopped coriander.
6. Serve immediately with red coconut chutney.
