MUTTON MEWA PULAO:
Mutton / beef 1 kg
Rice sela 750 gm
Oil ½ cup
Onion 1
Salt as required
Small cardamom 4-6
Cinnamon sticks 2-3
Bay leaf 1 – 2
Sugar 1 tbsp
White pepper 1 tsp
Carrot (chopped) 1 cup
Almonds 2 tbsp
Raisins 2 tbsp
Cashew nut 2 tbsp
Water as required
Method:
Heat oil add onion satue. Add meat fry well. add all spices with water and boil. Add carrot and nuts then add rice and left for simmer. When simmer done add nuts on rice, dish out and serve.

MUTTON ROSH:
Mutton leg or shoulder 500 gm
Oil 2 tbsp
Garlic paste 1 tbsp
Salt as required
Turmeric powder ½ tsp
Cardamom small 4 – 5
Cinnamon sticks 1- 2
Whole black pepper ¼ tsp
Bay leaf 1
Tomato 1
Green chili 2 -3
Onion 1
Water as required
Method:
Heat oil in sauce pan adds garlic paste. Then add mutton and cook for 1 to 2 minute well. Add all spices mix well. Add water and cover sauce pan with aluminum foil. Tightly close the lid and left for simmer after turn the flame on low. Add tomatoes, onion and green chilies and cook for 5 to 7 minute. Sieve mutton stock and serve.
