Thai fried rice:
Ingredients:
Boiled rice 3-1/2cup
Boiled peas 3/4cup
Eggs 2
Garlic 2 cloves
Onion (finely cut) 1
coriander (finely cut) 4tbsp
Thai red curry paste 1-1/2tbsp
Thai fish sauce 1tbsp
Tomato ketchup 2tbsp
Oil 4tbsp
Cucumber for garnishing
Method:
Beat two eggs and fry an omelet. then in a pan slightly fry chopped onions and garlic.then add Thai red curry paste,Thai fish sauce,Tomato ketchup and mix them.then mix boiled rice and boiled peas.lastly serve it with cucmber and egg rolls.
Thai Cashew Chicken:
Ingredients:
Chicken boneless (cut lengthwise) 400 grams
Refined Flour 3tbsp
Oil 1/2cup
Garlic (chopped) 1-1/2tbsp
Red chili (cut lengthwise) 6-7
Onion (cut lengthwise) 1
Cashew (unsalted) 3/4cup
Salt 3/4cup
Thai red chili (cut lengthwise) 2
Spring onion (cut lengthwise) 2
Sauce ingredients:
Thai red curry paste 1tbsp
Soy sauce 2tbsp
Dark soy sauce 1tbsp
Oyster sauce 1tbsp
White pepper 3/4tsp
Chicken stock 1/2cup
Method:
Add salt and flour on the chicken and after 15mins deep fry it. In another pan heat oil and fry cashew and red chili (long) separately. Then mix the sauces ingredients thoroughly. Heat 2tbsp oil and slightly fry crushed garlic and onions. Add spring onion in the sauce. Then add fried chicken till it tenders and mix cashew for serving it hot.
Banana and Coconut Cream:
Ingredients:
Bananas 6-8
Coconut cream 1-1/2 cup
Chopped Mint 1tbsp
Condensed milk 2tbsp
Roasted almonds 2tbsp
Orange essence 2drops
Mint Leaves for garnishing
Method:
Cut the bananas in thick slices. In a bowl add coconut cream, condensed milk, coriander and mix it with the bananas. Serve it in a dish with roasted almonds and coriander for garnishing.
