INGREDIENTS

1/2 kg Chicken with bone,2 tbsp Yogurt,1 tsp National Ginger garlic paste,1 tsp Pepper pd, National Salt to taste

INGREDIENTS FOR GRAVY.

2 Onions,1 Tomato,1 Tbsp Fresh Chopped Ginger and Garlic,1 tsp National National Red chilli Powder ,1 tsp National Cumin pd,2 tsp Chicken Masala,2 tbsp Fresh Mint ,1/2 Cup Olpers Cream, National Salt to taste,Oil.

HOW TO PREPARE

Marinate chicken with the ingredients given above for about an hour or an half an hour.Heat oil in a pan. Add onions and ginger garlic and saute till its raw smell disappears. Then add all the masala pd followed by tomato and cook for a min. Drop in mint leaves and finally add the marinated chicken. Stir and cover them for about 20 min. Do not add water because the chicken gets cooked in its own juice. Once the chicken gets cooked, stir again and make sure the gravy is semi dry. Add Olpers cream and remove from flames. Garnish with fresh coriander leaves.

Heat oven to 220C/200C fan/gas 7. Put 1 tsp oil in each well of a 12-hole muffin tin and heat in the oven for 6 mins. Meanwhile, tip the flour and some seasoning into a large, wide jug or a bowl. Beat the eggs with the milk and mustard, then gradually beat into the flour mixture until it makes a smooth batter. Pour or ladle the batter into the tin, taking care that it doesn’t splatter up and burn you. Bake for 25-30 mins until well risen and golden – try to keep the door closed, as this will help you get a good rise on the Yorkies.

Rum babas with poached pineapple & vanilla ice cream

For the babas, gently heat the milk, then allow to cool slightly so it’s tepid. Add 1 tsp sugar to the yeast, then pour in the milk and allow to stand for a few mins until the mixture is foamy. Combine the flour, remaining sugar and ½ tsp salt in a bowl, then pour in the yeast mixture, eggs and the melted butter and mix until smooth and shiny. Cover with a tea towel and leave to prove in a warm place for 1 hr. Butter and flour 6 dariole moulds or small metal pudding moulds. Knock back the dough; then, using your fingers, form 6 little balls and place 1 ball into each mould. Leave to prove again until the dough starts to rise over the top of the moulds, about 30-40 mins. Meanwhile, heat oven to 180C/160C fan/ gas 4. Space the moulds out on a baking tray, then cook for 15 mins. Leave to cool for a few mins, then carefully loosen the babas away from the sides with a small sharp knife. Turn out onto a wire rack and leave to cool. For the poached pineapple, put the star anise, bay leaves, coriander seeds and sugar into a large pan with 1 litre of water, and bring to the boil. Reduce the heat, add the pineapple and cook for 20 mins. Leave to cool for 5 mins, then take out the pineapple, drain and set aside. Add the rum to the syrup and allow to cool. Can be made the day ahead up to this point. To make the vanilla cream, whip the cream with the icing sugar and vanilla seeds to soft peaks. Set aside, then chill until ready to use. Halve the babas and drench in the rum syrup until soaked through. Serve with the pineapple chopped into chunks, plus a dollop of cream extra syrup for everyone to drizzle over. If you like, you can heat the 50g butter in a frying pan until browned, cook the pineapple rings on both sides until golden, then grind over black pepper before serving as above.

Mustard-buttered chicken with tarragon, peas & carrots

Heat oven to 200C/fan 180C/gas 6. Beat the mustard and butter together, then season well. Put the chickens into a large roasting tin; then, starting at the neck end, pull the skin away from the breast and thigh meat with your fingers. Stuff the butter under the skin, saving 1 tbsp for later. Put half the garlic bulb into each cavity. Season generously, cover with foil, then roast for 1 hr, uncovering for the final 20 mins, until crisp and golden. Lift the birds onto a board, then sit the pan on the hob and splash in the wine. Reduce for 5 mins, scraping up the meaty bits with a wooden spoon, then add the stock and bring to a simmer. Tip in the carrots, cover with a sheet of foil, then cook for 5 mins. You can do this ahead of time. Add the peas and simmer for a few mins until tender. Just before serving, whisk in the reserved mustard butter, chopped herbs and any resting juices, then season to taste. If you like, transfer everything to a platter and bring to the table – or simply return the chickens to the roasting pan.

Mix all of the marinade ingredients together in a large mixing bowl with 1½ tsp salt. Add the chicken pieces and mix together until well-coated, then cover the bowl and chill for 1 hr or overnight in the fridge.

Heat the oven to 240C/220C fan/gas 9. Transfer the chicken pieces to a large baking tray (discard any remaining marinade), and cook for 10-15 mins. Turn the pieces after 10 mins so they colour evenly on both sides. The chicken doesn’t need to be completely cooked through at this point as it will cook for a few more mins in the sauce.

Meanwhile, for the sauce, slice the tomatoes in half and put in a large pan in a single layer with 125ml water, the grated ginger, garlic, cardamom, cloves and bay leaf. Simmer, covered, until the tomatoes have completely disintegrated, about 20-25 mins. Remove the whole spices and blend the tomato mixture with a stick blender, then pass it through a sieve to make a smooth purée. Return to a clean pan, add the chilli powder and simmer for 12-15 mins. It should slowly begin to thicken. When the sauce turns glossy, add the chicken pieces and any of the reserved roasting juices from the tray. 

Slowly stir in the butter, a couple of pieces at a time, and simmer for 6-8 mins until the chicken is cooked through. Add the chopped ginger, green chillies and cream, then simmer for a min or two longer, taking care that the sauce doesn’t split. Stir in 1 tsp salt, fenugreek leaves, if using, and the garam masala, then check the seasoning, adjust if necessary, then add the sugar. In a separate pan, warm all the ingredients for the spiced butter, if using, until the seeds start to pop (see below). Spoon over the curry, scatter with the coriander, onion, chilli, and a drizzle more cream, if using. Serve with naan, pilau rice and chutney.

Crumble saffron into a small bowl, add the milk and leave to steep

Place the coriander seeds, salt and peppercorns into a pestle and mortar and crush

Add the roughly chopped ginger and garlic and pound to create an aromatic paste.

Place the chicken into a large bowl and add the yoghurt, gram flour, turmeric and the paste from the pestle and mortar. Stir thoroughly, cover and leave to marinade for an hour or longer if possible.

Heat oil or ghee in a pan and add the cloves, cardamom pods, cassia and the dried red chillies and fry for a few minutes until fragrant.

Add the minced onions and fry gently on a medium heat for about 10 minutes, until they just begin to brown.

Add chicken and stir-fry for about 5 minutes on a medium heat, stirring occasionally.

Place the lid on the pan, reduce the heat and leave to cook for about 15-20 minutes.

Pour in the creamed coconut, with the ground almonds and poppy seeds then stir to thicken.

Increase the heat and simmer until the chicken is tender and the sauce has thickened to the consistency you want. Pour in the saffron milk for added decadence and remove the pan from the heat.

Garnish with the garam masala and fresh coriander. You can also add a squeeze of lemon juice for added freshness, then serve.

Stuffed jollof chicken with hot peanut & tomato sauce

Make the joloff-spiced butter. Pound the garlic, some sea salt, the thyme and lime zest using a pestle and mortar, then add the spices and the butter and pound more. Add the lime juice gradually, then set aside.

To make the stuffing, heat the butter in a saucepan, add the onion and cook until soft. Add the rice and stir for 1 min, then add enough water to cover by about 2cm and bring to the boil. Boil until the surface of the rice looks ‘pitted’, then turn the heat down very low, cover and cook for 15 mins until the rice is almost cooked (it will cook further inside the chicken). Transfer to a mixing bowl and leave to cool. Heat oven to 180C/160C fan/gas 4.

Heat the groundnut oil in a frying pan and cook the sweet potato until golden. Add the garlic and ginger and cook for another 2 mins, then add the tomatoes and season. Cook, stirring often, until the tomatoes are soft and the sweet potato is almost tender. Leave to cool, then tip into the bowl with the rice and add the lime juice.

Put the chicken in a roasting tin and carefully loosen the skin over the breast by gently pulling it up and inserting your fingers between the skin and the flesh. Push half of the butter in under the skin, spreading it out with your hands. Season the chicken inside, then spoon the rice stuffing right down into the cavity. Spread the rest of the butter over the top of the chicken, then season. Roast for 1 hr 20 mins. To check it’s cooked, insert a skewer in where the thigh meets the body – the juices should run clear.

Meanwhile, to make the sauce, heat the oil in a saucepan and cook the onion until soft. Add the garlic, ginger and spices and cook for another 2 mins, then add the water or stock and the tomatoes. Season. Bring to the boil, add the sugar and the chillies, then turn down the heat and simmer gently for 30 mins. Add the peanut butter and cook, stirring, for another 12 mins. Add more water if it’s too thick, then add the lime juice to taste and check the seasoning. You may want to add more sugar.

When it’s cooked, leave the chicken to rest, covered with foil, for 15 mins, then serve with the peanut sauce and green vegetables on the side.
