- 1 cup dried mixed fruit (raisins, currants, cranberries)

Instructions
- Preheat oven to 180°C (350°F).
- Grease a 1-quart pudding basin.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- Combine the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Stir in the dried fruit and nuts.
- Pour the batter into the prepared pudding basin.
- Place the pudding basin in a larger baking dish and fill with hot water halfway up the sides of the pudding basin.
- Bake for 1 hour 30 minutes, or until a skewer inserted into the center comes out clean.
- Let cool completely before serving.
