Ingredients

  • For the Base:
    • 150g low-fat digestive biscuits, crushed
    • 50g unsalted butter, melted
  • For the Filling:
    • 300g low-fat cream cheese
    • 200g low-fat Greek yogurt
    • 100g caster sugar
    • 2 large eggs
    • 1 tsp vanilla extract
  • For the Cherry Topping:
    • 300g fresh or frozen cherries
    • 2 tbsp honey
    • 1 tbsp cornstarch mixed with 2 tbsp water

Instructions

  1. Prepare the Base: Preheat your oven to 180°C (160°C fan). Mix the crushed biscuits with melted butter until well combined. Press the mixture into the base of a 20cm springform pan lined with baking parchment. Bake for 10 minutes, then set aside to cool.
  2. Make the Filling: In a large bowl, beat the cream cheese, Greek yogurt, and caster sugar until smooth. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  3. Assemble and Bake: Pour the filling over the cooled base. Smooth the top with a spatula and bake for 30-40 minutes, or until the edges are set but the center still has a slight wobble. Let the cheesecake cool completely, then refrigerate for at least 4 hours or overnight.
  4. Prepare the Cherry Topping: In a saucepan, combine the cherries and honey. Cook over medium heat until the cherries release their juices. Add the cornstarch mixture and simmer until thickened, about 2-3 minutes. Let cool completely.
  5. Serve: Spoon the cherry topping over the chilled cheesecake before serving.
