Crispy Mutton Strips

Ingredients

  • Mutton mince 300 gm
  • Onion 1 medium
  • Spring onion 1
  • Green chilies 2, 3
  • White bread slices 6, 7
  • Egg 1
  • Onion 1
  • Coriander leaves ¼ bunch
  • Lemon juice 1 tbsp
  • Garlic paste 1 tbsp
  • Flour 1 tbsp
  • Black pepper powder ½ tsp
  • Corn flour 2 tbsp
  • Oil for fry
  • Salt to taste

Cooking Directions

  1. Add together mutton mince, onion, green chilies, coriander leaves, spring onion and garlic paste in chopper and chopperize well.
  2. Remove mixture in a bowl add egg, corn flour, flour, salt, black pepper and lemon juice. Mix well.
  3. Discard crust of bread slices, press well with a rolling pin.
  4. Now spread mince mixture on bread slices and roll in them like swiss rolls.
  5. Heat oil in wok and deep fry remove on absorbent paper and serve with sauce.

Prawn bruschetta with lemony fennel salad

Bring a pan of water to the boil then add the fennel slices for 2-3 mins until just tender. Drain well and toss with reserved fennel fronds, dill, lemon zest and juice, 2 tsp olive oil and seasoning. Brush the slices of bread with remaining oil. Place in a hot griddle pan (or under a grill) and toast on both sides until lightly charred. Rub one side of each slice with the garlic, then divide the fennel salad between them. Top with the prawns, then the rocket and serve.

Baked polenta with spinach & goat’s cheese

Heat oven to 220C/200C fan/gas 7 and boil the kettle. In a bowl, mix the garlic and tomatoes with seasoning, then pour into a large baking dish. Place the spinach in a large colander and pour boiling water over until wilted. Rinse in cold water and squeeze out all the excess water you can with your hands. Roughly chop, season, and scatter on top of the tomatoes. Slice the polenta, then overlap on top of the spinach. Drizzle with the oil and bake in the oven for 10-15 mins. Scatter over the cheese and return to the oven for 5 mins more, or until the cheese is golden and bubbling.

Summer lamb with carrot & fennel salad

Rub the lamb with a little oil and half the lime juice, then season with salt and pepper. Barbecue or cook in a hot griddle pan for 10-15 mins, turning occasionally. Remove from the heat, cover with foil and set aside to rest. Meanwhile, whisk the remaining lime juice and the fennel seeds together with some salt and pepper and a little olive oil in a large bowl. Add the carrot and red onion, then mix well. Warm the pitta breads on the barbecue or griddle pan, then make a slit in each to form a pocket. Slice the lamb and stuff into the pittas with the carrot salad and lettuce leaves.

Tip the mince, onion, egg, breadcrumbs, nutmeg and garlic powder into a large bowl and generously season with black pepper. Mix everything together using your hands, then shape the mixture into six patties. Transfer to a plate, cover and chill for 1 hr or up to a day.

Heat a barbecue to medium or until a thin layer of coals has turned grey. Cook the burgers for 10 mins, turning occasionally, until lightly charred and cooked through. Top with sliced cheese during the final 2 mins of cooking time, if you like. 

Serve the burgers in the buns topped with the lettuce, tomato and lingonberry sauce, if you like.
