A quick and simple dhokla recipe perfect for breakfast or an evening snack.
RAWA DHOKLA
Ingredients
1½ cups fine semolina (rawa)
1 cup yogurt
2 tsps ginger-green chilli paste
Salt to taste
1 tsp fruit salt
1 tbsp oil
1 tsp mustard seeds
¼ tsp asafoetida
6-8 curry leaves
1 dried red chilli
Green chutney to serve
Method
1. In a bowl, add semolina, yogurt, and mix well. Add 1 cup water and mix well, set aside for 10-15 minutes.
2. Add 1 cup water and mix well. Add ginger-green chilli paste, salt, fruit salt and1 tbsp water, mix well. Pour the mixture into a greased thali.
3. Heat sufficient water in a steamer, place the thali and steam on medium heat for 10-15 minutes and allow to cool slightly.
4. For the tempering, heat oil in a non-stick pan, add 1 tsp mustard seeds, let them splutter. Add asafoetida, curry leaves, break dried red chilli and add it to the pan and take it off the heat.
5. Pour the prepared tempering on the dhokla and spread it evenly. Cut into squares and serve with green chutney.
