Chicken with a South-Indian twist, Pulled Chicken Uttapam is a unique recipe with slightly takes time, but is definitely worth it!
PULLED CHICKEN UTTAPAM
Ingredients
6 chicken drumsticks
Ready-made dosa batter
1½ tbsps ginger-garlic paste
Salt to taste
Crushed black peppercorns to taste
½ tsp turmeric powder
1½ tsps red chilli powder
2 tsps oil + for greasing
Ghee for basting
1 tsp mustard seeds
A pinch of asafoetida
¼ cup chopped curry leaves
Butter as required
Coconut chutney to serve
Method
1. Preheat the oven at 180˚C.
2. Make incisions on the chicken and place them in a large bowl. Add ginger-garlic paste, sprinkle salt, crushed black peppercorns, turmeric powder, red chilli powder and rub the spices on the chicken till well coated.
3. Grease a baking tray with oil, place the chicken drumsticks on it and bake for 20-25 minutes. Basting with ghee in between. Take it out of the oven and allow to come to room temperature.
4. Using a fork, shred the chicken.
5. Heat 2 tsps oil in a non-stick pan, add mustard seeds, let them splutter. Add asafoetida and chopped curry leaves and saute for a minute.
6. Add the shredded chicken and toss well. Add salt, crushed black peppercorns and mix well. Cook for 1 minute. Take it off the heat.
7. Heat a non-stick shallow pan, pour a portion of the batter into it. Spread it lightly, keeping the uttapam thick.
8. Add a little butter on the sides and cook till the base is cooked completely. Flip and cook for 1 minute.
9. Flip and add a portion of the prepared chicken mixture and spread it evenly. Cook for a few seconds. Take it off the heat.
10. Serve hot with coconut chutney.
