Pita Sticks with Sun Dried Tomato Hummus
This recipe shows you how to make a tangy variant of hummus that combines chick peas with sun-dried tomatoes, curds and other flavour enhancing ingredients. This unusual hummus tastes fabulous with crispy, deep-fried pita bread strips. Serve the Pita Sticks with Sun-Dried Tomato Hummus as a starter or as an evening tea snacks.
Preparation Time: 10 minutes.
Cooking Time: 15 minutes.
Serves 4.
For the pita sticks
3 pita bread (7”) each
Oil for deep-frying
For the sun dried hummus
1 cup soaked and boiled chick peas (kabuli chana)
½ cup curds (dahi)
½ cup soaked and finely chopped sun dried tomatoes
2 tsp roughly chopped garlic (lehsun)
2 tsp olive oil
Salt to taste
For the pita sticks
1. Cut each pita into 8 equal sized strips.
2. Heat the oil in a deep non-stick kadhai and deep-fry a few pita strips at a time on a high flame till they turn golden brown in color from all the sides. Drain on an absorbent paper.
For the sun dried hummus
Combine all the ingredients in a mixer along with ¼ cup of water in a mixer and blend till smooth. Keep aside.
How to serve
Serve the sun dried hummus with pita sticks and serve immediately.
