A healthy twist to the regular paneer bhurji with the inclusion of methi.
PANEER METHI BHURJI
Ingredients
500 grams cottage cheese (paneer)
1 medium bunch of fenugreek leaves, finely chopped
4 tbsps oil
1 tsp cumin seeds
2 green chillies, chopped
1 large onion, chopped
Salt to taste
½ tsp turmeric powder
Rotis to serve
Method
1. Heat oil in a non-stick pan, add cumin seeds and let the colour change. Add green chillies and sauté for a few seconds.
2. Add onion and sauté till golden brown. Add chopped fenugreek leaves, salt, turmeric powder and sauté well for 2 minutes.
3. Grate the paneer directly onto the cooking mixture, sauté well and cook for 2 minutes. Take it off the heat.
4. Serve hot with rotis.
