Pachdi- Similar to Raita but in the South-Indian style, made with tomatoes tangy and creamy, a great accompaniment with your full-course meal.
PACHADI
Ingredients
2 medium tomatoes, finely chopped
1¼ cups yogurt, whisked
1 tbsp oil
1 tsp mustard seeds
¼ tsp asafoetida (hing)
1 tsp split skinless black gram (dhuli urad dal)
2 dried red chillies
¼ tsp red chilli powder
Salt to taste
Fried curry leaves for garnish
Method
1. Heat oil in a non-stick pan, add mustard seeds, asafoetida, split skinless black gram and break dried red chillies and add. Add red chilli powder and sauté for a few seconds.
2. Add tomatoes sauté well. Add salt, mix and cook till the tomatoes turn soft and pulpy. Take the pan off the heat and transfer on to a plate and set aside to cool completely.
3. Take yogurt in a bowl, add the prepared tomato mixture and adjust salt, mix till well combined.
4. Transfer into a bowl, garnish with fried curry leaves and serve chilled.
