Egg Omelette topped with pizza sauce and your favourite fresh vegetable toppings and loads of cheese.
OMELETTE PIZZA
Ingredients
12 eggs
Salt to taste
Crushed black peppercorns to taste
4 tablespoon oil
2 tablespoons finely chopped garlic
8 tablespoons finely chopped spring onion bulbs
4 tablespoon finely chopped three coloured capsicums
4 tablespoon pizza sauce
4 tablespoon mixed capsicum strips
2-3 green olives, sliced
4-5 black olives, sliced
20-24 fresh basil leaves
4 tablespoons sliced spring onion greens
8 tablespoons grated mozzarella cheese
Mixed dried herbs for sprinkling
Red chilli flakes for sprinkling
Method
1. For each pizza, whisk together 3 eggs, salt and crushed peppercorns in a bowl.
2. Heat 1 tablespoon oil in a non-stick pan. Add ½ tablespoon garlic and 2 tablespoons spring onion bulbs, mix and sauté well. Add 1 tablespoon chopped capsicums and mix.
3. Pour egg mixture into the pan, spread, cover and cook for 1 minute. Spread 1 tablespoon pizza sauce and top with 1 tablespoon capsicum strips, 5-6 green olive slices and 8-10 black olives, 1 tablespoon spring onion greens and 2 tablespoons cheese, cover and cook till cheese melts.
4. Cut into wedges, sprinkle mixed herbs and chilli flakes and serve hot with tomato ketchup.
