Nutty banana fritters:

Ingredients

Almonds ground 1/3 cup
cold water ¼ cup
ripe bananas, peeled, cut 4 large
Oil as required
Custard to serve

Method
Spread the ground almonds on a plate. Use a pastry brush to brush bananas evenly with water. Roll the bananas in the ground almonds to evenly coat. Heat the oil. Add the bananas and cook for 3-4 minutes each side or until golden brown. Drain on paper towel. Place bananas in serving bowls and serve with custard.

Murgh malai tikka:

Ingredients

Boneless chicken cubed ½ kg
Onion cubed 1
Dried fenugreek leaves 1 tbsp
Charcoal piece 1
Ingredients to marinate
Yogurt thick 1 cup
Cream cheese 3 tbsp
Sour cream 1 tbsp
Garlic paste 1 tbsp
Ginger paste 1 tbsp
Coriander and mint chutney 3 tbsp
Lemon juice 1 tbsp
Green chili paste 1 tsp
Corn flour 1 tsp
Cumin powder 1 tsp
Red chili powder 1 tsp
Oil 2 tbsp
Salt to taste
Method:
Combine all the marination ingredients in a bowl. Add the chicken and mix to coat everything. Cover with cling and keep in the fridge for a minimum of 30 minutes or preferably overnight. Just before cooking, add in onion cubes and dry fenugreek leaves. Cook in a pan in very little oil till done. Lastly give charcoal. Serve with any chutney, sauce or dip.
