MUTTON STEW WITH GARLIC BREAD

Ingredients

750 grams mutton, cut into 1 inch pieces on bone
1 tablespoon butter
1 teaspoon oil
5-6 black peppercorns
1 bay leaf
8-10 garlic cloves, finely chopped
2 medium onions, thinly sliced
2 tablespoons refined flour (maida)
Salt to taste
Crushed black peppercorns to taste
2 medium potatoes, peeled and cut into 1 inch cubes
3 cups mutton stock
Garlic bread
1 baguette
10-12 garlic cloves, finely chopped
¼ cup butter
½ teaspoon chilli flakes
1½ tablespoons finely chopped fresh parsley
Salt to taste
Crushed black peppercorns to taste

Method

1. To make garlic bread, preheat oven to 180º C. Slice baguette and set aside.
2. Mix together butter, chilli flakes, garlic, parsley, salt and crushed peppercorns in a bowl.
3. Spread garlic-herb butter on bread slices and arrange on a tray. Put the tray in the preheated oven and bake for 5-6 minutes.
4. Heat butter and oil in a pressure cooker. Add peppercorns, bay leaf and garlic, mix and sauté till garlic turns golden brown.
5. Add onions, mix and sauté till translucent. Add mutton pieces, mix well and cook on high heat for 5-6 minutes.
6. Add flour and mix well. Add salt, crushed peppercorns and potatoes mix well. Add stock, mix well, cover and pressure cook till the pressure is released 4 times.
7. Serve hot with garlic bread.
