Mutton pieces cooked in gram flour yogurt based curry. Goes perfect with steamed rice.
MUTTON KADHI
Ingredients
500 grams boneless mutton, cut into 1 inch pieces
1 cup gram flour (besan)
1 cup yogurt
1 tablespoon garlic-green chilli paste
1 teaspoon ginger-green chilli paste
Salt to taste
2 tablespoons oil
1 teaspoon black peppercorns
6-8 cloves
1 teaspoon finely chopped ginger
1-2 green chillies, finely chopped
2 medium onions, sliced
¼ teaspoon asafoetida (hing)
1 medium tomato, finely chopped
¼ teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon coriander powder
½ teaspoon garam masala powder
A pinch green cardamom powder
1 teaspoon finely chopped fresh coriander leaves
Fresh coriander sprig for garnishing
Method
1. Put mutton pieces in a bowl. Add garlic-green chilli paste and salt, mix well and set aside to marinate.
2. Mix together gram flour, yogurt, ginger-green chilli paste and salt with sufficient water to a thin mixture.
3. Heat oil in a non-stick pan. Add peppercorns, cloves, ginger, green chillies and onions and mix well.
4. Add salt and asafoetida, mix well and sauté till onions turn golden brown. Add tomato, mix and cook till it turns soft and pulpy.
5. Add turmeric powder, chilli powder, coriander powder and garam masala powder, mix well and cook for a minute.
6. Add marinated mutton pieces and mix. Add sufficient water and salt, mix well, cover and cook till mutton is tender.
7. Add gram flour-yogurt mixture and stir to mix. Add cardamom powder and coriander leaves, mix well and bring to a boil.
8. Garnish with coriander sprig and serve hot.
