MATKA KULFI

Ingredients

5 cups (1 litre) milk
¼ cup castor sugar
¾ cup grated khoya
½ teaspoon green cardamom powder
1 tablespoon blanched and finely chopped pistachios

Method

1. Bring milk to a boil in a deep non-stick pan and cook till reduced to ⅓ its volume.
2. Remove from heat, add castor sugar, khoya and cardamom powder and mix till khoya melts. Add pistachios and mix well.
3. Fill the mixture into earthen pots (kulhads/matkas) and freeze till set.
4. Serve immediately.
