A mango-flavoured curry recipe straight from the beautiful land of Mangalore!
MANGALOREAN MANGO CURRY
Ingredients
4-5 medium lal baug mangoes, ripened
1 tsp mustard seeds
½ tsp dried fenugreek seeds (methi dana)
¾ tsp cumin seeds
6-8 black peppercorns
1 tsp coriander seeds
2 dried red chillies
1 small onion, sliced
½ inch ginger, sliced
3-4 garlic cloves
2 tbsps oil
8-10 curry leaves
¼ tsp turmeric powder
Salt to taste
1 tbsp chopped jaggery
1 tbsp tamarind pulp
Fried curry leaves for garnish
Method
1. Tap each mango on a worktop, remove the eye and squeeze out the flesh into a large bowl. Squeeze the pulp out, discard the pit.
2. In a shallow pan, add mustard seeds, methi dana, cumin seeds and black peppercorns, coriander seeds, break and add dried red chillies. Dry roast till fragrant.
3. Transfer the spices into a blender jar, add onion, ginger, garlic and a little water. Grind to a smooth paste.
4. Heat oil in a deep pan, add curry leaves and let them splutter. Add the prepared paste and sauté well.
5. Add turmeric powder, salt and mix well. Cook till the oil separates, mixing continuously.
6. Add the mango puree and mix well. Add 1 cup water and mix well, cover and cook till the mixture boils.
7. Add chopped jaggery, tamarind pulp and mix well. Cook till jaggery melts and take it off the heat.
8. Transfer into a serving bowl, garnish with fried curry leaves. Serve hot.
