Ussal is a favourite one from the streets of Maharashtra. This one is made ultra- special with cashewnuts.
KAJU USSAL
Ingredient
1½ cupscashewnuts, soaked for 2-3 hours
2 tbsps oil
1 tsp mustard seeds
¼ tsp asafoetida
2 green chillies, slit
½ cup green peas
½ tsp turmeric powder
Salt to taste
1 tsp sugar
2 tbspsgoda masala
¼ cup chopped coriander leaves
½ cup scraped coconut
Coriander sprig for garnish
Method
1. Heat oil in a non-stick pan, add mustard seeds and let it splutter. Add asafoetida, green chillies.
2. Add green peas, cashewnuts, turmeric powder, salt, sugar ,goda masala, coriander, scraped coconut and sauté for 2-3 minutes, cover and cook for 5 minutes.
3. Garnish with coriander and serve hot.
