Yummy parathas made with raw papaya!
KACHCHE PAPITE KE PARANTHE
Ingredients
1 small raw papaya (kachcha papita), peeled and grated
1½ cups whole wheat flour + for dusting
Salt to taste
2 tbsps oil + for shallow-frying
½ tsp red chilli powder
¼ tsp turmeric powder
2 tsps dried mango powder
2-3 green chillies, finely chopped
¼ cup chopped fresh coriander
2 tsps ghee
Yogurt to serve
Method
1. Place the grated papaya in the bowl. Add salt, mix well and set aside for 10-15 minutes.
2. Mix together the whole wheat flour, salt and two tablespoons of oil in a bowl. Add sufficient water and knead into soft dough. Cover with a muslin cloth and set aside for 15-20 minutes.
3. Take a plate, keep muslin cloth on top and place grated papaya, squeeze out excess water and transfer into another bowl. Add red chilli powder, turmeric powder, dried mango powder, green chillies and chopped coriander. Mix well.
4. On a worktop, roll the dough and divide into equal portions. With the thumbs make cavity in the divided dough portions and place a spoonful of stuffing and seal the edges.
5. Dust some flour on the worktop and flatten each portion with a rolling pin into thick disc.
6. Roll out the second portion of dough into a thick puri and place on top of first puri.
7. Heat a non-stick tawa. Place the prepared parantha on tawa, heat and cook well. Drizzle ghee on both the sides of parantha and shallow-fry till golden brown on both the sides.
8. Serve hot with yogurt.
