A healthy take on the classic Sabudana Vada.
HEALTHY SABUDANA VADA

Ingredients

2 cups soaked sago
1 large sweet potato boiled, peeled and mashed
½ cup roasted and crushed peanuts
Salt to taste,
1 tbsp ginger -green chilli paste
2 tbsps chopped fresh coriander
A wedge of lemon
Oil for brushing
Coconut chutney to serve

Method

1. Preheat an air-fryer to 180˚C.
2. Take sago in a bowl. Add sweet potato, peanuts, salt, ginger and green chilli paste, coriander and squeeze a wedge of lemon. Mix well.
3. Take a portion of mixture and slightly flatten it to form sabudana vada.
4. Brush oil in the air-fryer base and on both the sides of the sabudana vadas.
5. Bake in a preheated air-fryer for 25 minutes.
6. Serve hot with coconut chutney.
