Start your day with this deliciously healthy and sweet sandwich loaded with fruits and nuts that provide you vitamins, minerals and healthy fats!
HEALTHY FRUIT AND NUT TOASTED SANDWICH
Ingredients
8 whole wheat bread slices
2 medium red apples, peeled and cored
1 tsp butter + for apply + for toasting
½ cup orange juice
10-12 roasted cashew nuts
¼ cup roasted almonds
¼ cup roasted walnuts
½ cup grated cottage cheese (paneer)
Maple syrup to serve
Method
1. Thickly slice apples and set aside.
2. Heat butter in a non-stick pan, place the apple slices and cook for 1-2 minutes on both sides. Add orange juice and cook for 2-3 minutes or till the moisture dries up.
3. Put cashew nuts, almonds and walnuts in a mortar and pestle and pound to a coarse powder.
4. Take cottage cheese in a bowl, add nuts mixture and mix well. Set aside.
1. Apply butter on one side of each bread slice and spread the apple mixture evenly on four slices of bread. Spread a portion of the nut-cottage cheese mixture over the apple. Cover with remaining slices of bread.
2. Heat a little butter on a grill pan and place the sandwiches and grill for 1-2 minutes, flip and apply a little butter. Grill further for 1-2 minutes.
3. Transfer the sandwiches on a serving plate and serve warm with maple syrup.
